Coles Australia Launches New Premium Feature

A Coles supermarket in North Sydney has unveiled a new in-store feature, a make-your-own pasta bar, which comes with seven different sauces. 

Customers can choose between four different types of ravioli, including portobello and porcini mushroom, spinach and ricotta, beef and vegetable, or roast pumpkin and grana padano. They can also choose linguine or fettuccine options.

There are add-ons available, such as mascarpone cheese, gourmet feta, fior di latte, green olives, artichokes, fresh and marinated octopus, and more.

Customers are asked to use the packaging provided, weigh it, and proceed to pay for it at the counter. 

A spokesperson said, "This gourmet pasta range is inspiring our customers in North Sydney and is available in 20 Coles Local stores across Victoria, New South Wales and Queensland."


The pasta is created by Alligator Brand in Melbourne, known for manufacturing pasta for over three decades. The company uses products such as free-range eggs and durum semolina to create the pasta. 

"The filled pasta also utilises local and seasonal ingredients such as Victorian Wagyu, fresh Buffalo Mozzarella and Manjimup Truffles from WA, as well as premium Aged Grana Padano and Pecorino Romano from Italy."

Coles Local customers also have the opportunity to grab some hot bread from the bread warmer or enjoy single-serve ice cream, self-serve mochi, macarons, and gelato cones.

They also have pet selections containing pet treats. These locations are more upmarket than regular grocery stores. 


Another Local store was opened in Rose Bay in 2020, which features premium sourdough bread treats and sweets from Sydney stalwart Sonoma to Southeast Asian delights.

"Customers want us to make their lives easier, and this store offers our customers the convenience of a supermarket with the range of a specialty store," former Coles CEO Steven Cain said.

This offering also comes with vegan and vegetarian ranges, as well as over 350 lunch and dinner options which can be prepared in under half and hour.
